A traditional Italian seasoning is Pesto alla genovese. Originally from Liguria, it is a cold sauce consisting of crushed garlic, pine nuts, coarse salt, basil and cheese, mixed with olive oil and crushed in a marble mortar.
The ancient Romans already prepared a similar condiment called moretum, and in the Middle Ages, the Genoese had another sauce called agliata. It was in the nineteenth century with the introduction of basil, originally from India, that the classic pesto recipe we know was complete.
It is an ideal accompaniment for pasta and chicken, and is also used to marinate meats. We are proud of all our dishes prepared with authentic recipes of Italian cuisine.
